One of my favorite posts of the week is the What to Cook Wednesday feature.  It introduces me to new sites and recipes.  Granted, I may not always stick to this What to Cook Wednesday menu each and every week (life can get in the way) but it is fun to put it together and have it as a framework!

Sunday:  We have our monthly dinner club and I’m on the hook for an appetizer.  Still completely undecided on that but I think I will make Macaroni and Cheese for lunch and leftovers!

Monday:  Pork Chops tend to get less rotation in our house but Pork Chops with Apples and Creamy Bacon Grits seems like a great way to work them in.  Seriously…bacon + cheese + grits makes this southern girl swoon.

Tuesday:  Do you ever see a picture of something and think “genius”?  That is how I felt when I saw the picture for Lasagna Cupcakes.  They are great for portion control and look so delicious.

Wednesday:  We’ve been deep in the land of take-out recently but I am hoping to steer us back towards more home cooked meals.  Knowing Mathlete will still want his take-out flavor fix, I went in search for General Tso’s Chicken that seemed to be at least midly authentic.

Thursday:  I love grilled chicken.  In fact, I can’t think of a way you can grill chicken that wouldn’t be delicious to me.  But, it can get a little boring.  Hopefully, adding mint pea puree and lemon salsa will fix that problem!

Friday:  A go-to for us is pesto.  Walnut Pesto is a little different take on it though!

Saturday:  In my recent pantry cleaning, I came across so many cans of chickpeas (probably from planned salads that never got made!).  I’ll put them to use for Indian Spiced Beef with Chickpeas.
