Strawberry Prosecco Cake Pops

Ingredients

  • 1 box Strawberry Cake Mix
  • 1/3 cup Regular Plain Yogurt
  • 1 1/3 cup Prosecco
  • 3 Eggs
  • 1 cup Prosecco Buttercream Frosting
  • Lollipop Sticks
  • Wilton Candy Melts

Instructions

  • Preheat oven according to box directions. 
  • Mix cake mix, yogurt and eggs at medium speed until fully combined. Slowly pour in prosecco with mixer on low.
  • Pour cake mix into prepared cake pan and bake according to box directions. Remove from oven and leave over night.
  • Crumble cake into crumbs {you can use your processor if you want...I used a 5 year old who wanted to play with the cake}. Add in 1 cup of prosecco buttercream frosting and mix well. Refrigerate for at least 30 minutes.
  • Roll 2 Tbsp of cake and frosting mixture into balls and place on nonstick surface. Stick lollipop stick in the top of each ball.
  • Melt Wilton candy melts in microwave according to package directions {30 second on 50% power, stir, 10 second intervals until fully melted}.
  • Dip cake balls into melted candy and place back on nonstick surface until hardened.

Notes

  • For this recipe, I recommend just making a 9x13 cake versus cupcakes.
