Ingredients
1package puff pastrythawed
2-3beets
1/2cupolive oil
1TablespoonItalian Seasoning
Salt and Pepper
4ouncescrumbled blue cheese
1Tablespoonhoney
2Tablespoonsfresh basilchopped.
Instructions
Preheat oven to 425 degrees. Line a rimmed baking sheet with parchment paper. Set aside.
Wash and trim tops off of beets. Wrap in foil and place in preheated oven. Cook for 1 hour or until softened. Unwrap and peel off skins. Slice into thin slices.

Unfold puff pastry piece onto rimmed baking sheet lined with parchment paper. In a small bowl, whisk together olive oil and Italian seasoning. Brush onto puff pastry dough.
1 package puff pastry, 1/2 cup olive oil, 1 Tablespoon Italian Seasoning
Sprinkle a light layer of crumbled blue cheese on top of oil. Top with sliced beets. Season with salt and pepper. Then, spoon additional blue cheese on top of beets. Bake at 425 degrees for 25 minutes.
4 ounces crumbled blue cheese, Salt and Pepper
Remove tart from oven and drizzle with honey and top with chopped basil. Enjoy while warm.

Notes
You can cut the puff pastry into 3 inch squares after unfolding to create smaller, individual tarts. Reduce the cooking time to approximately 20 minutes (start watching after 15 minutes) for the smaller tarts.
