Ingredients

  • 1 pound breakfast sausage
  • 1/2 onion grated
  • 6 mushrooms finely chopped
  • 1 parsnip finely chopped
  • 1/2 cup blueberries halved
  • 2 teaspoon dried sage

Instructions

  • Preheat oven to 375 degrees. Line a rimmed baking sheet with nonstick foil. Set aside.
  • In a large bowl, combine sausage, onion, mushrooms, parsnip and sage. Mix well. Fold in blueberries. {I use my hands to make sure everything is well mixed}
    1 pound breakfast sausage, 1/2 onion, 6 mushrooms, 1 parsnip, 1/2 cup blueberries, 2 teaspoon dried sage
  • Using a meatball scoop or spoon, form the sausage mixture into meatballs and place them on the prepared baking sheets.
  • Bake in oven at 375 degrees for 10 minutes. Reduce heat to 350 degrees and bake for an additional 10-15 minutes or until fully cooked.

Notes

To freeze: Place uncooked meatballs onto baking sheet and freeze. Transfer to freezer bag or other airtight storage once frozen.
