Tender roasted carrots are coated in a bright, buttery orange and honey glaze that caramelizes beautifully in the oven. This simple, vibrant side is sweet, fresh, and perfect for any meal.

Instructions
Preheat the oven to 425 F.
In a cast iron pan or an oven proof pan, melt the butter over medium heat. Add the orange juice, honey, orange zest, and salt. Stir to combine.
2 Tablespoons salted butter, ¼ cup freshly squeezed orange juice, 4 Tablespoons honey, Zest of 1 orange, ½ teaspoon kosher salt
Add the carrots and toss to combine. Place in the oven and roast for about 20 minutes, or until the carrots are tender. I suggest tossing the carrots half way through roasting.
1 ½ pounds carrots
Serve garnished with a sprinkle of parsley, if desired.

Notes
You can use baby carrots instead of sliced carrots.
You can use brown sugar instead of honey.
If you use normal table or sea salt use half the amount.
You can use fresh orange juice or store bought.
If you want a bit of char on them, you can turn the broiler on for 2-3 minutes at the very end.
Store leftovers in an airtight container in the fridge for up to 3-4 days.
