Orange Glazed Carrots

Tender roasted carrots are coated in a bright, buttery orange and honey glaze that caramelizes beautifully in the oven. This simple, vibrant side is sweet, fresh, and perfect for any meal.

Ingredients

  • 2 Tablespoons salted butter
  • ¼ cup freshly squeezed orange juice about 1-2 oranges
  • 4 Tablespoons honey
  • Zest of 1 orange plus more for garnish
  • ½ teaspoon kosher salt
  • 1 ½ pounds carrots peeled and cut into 1 ½ inch pieces on the diagonal
  • Chopped parsley for garnish

Instructions

  • Preheat the oven to 425 F.
  • In a cast iron pan or an oven proof pan, melt the butter over medium heat. Add the orange juice, honey, orange zest, and salt. Stir to combine.

  • Add the carrots and toss to combine. Place in the oven and roast for about 20 minutes, or until the carrots are tender. I suggest tossing the carrots half way through roasting.

  • Serve garnished with a sprinkle of parsley, if desired.

Notes

  • You can use baby carrots instead of sliced carrots. 
  • You can use brown sugar instead of honey.
  • If you use normal table or sea salt use half the amount.
  • You can use fresh orange juice or store bought.
  • If you want a bit of char on them, you can turn the broiler on for 2-3 minutes at the very end. 
  • Store leftovers in an airtight container in the fridge for up to 3-4 days.
