In a bowl, combine 1/2 tablespoon oil, cornstarch, salt, pepper, and chicken breast. Stir to coat the chicken pieces.
2 1/2 Tablespoons avocado oil, 1 1/2 pounds chicken breast, 1 1/2 Tablespoons cornstarch, 1 teaspoon salt, 1/2 teaspoon pepper
Heat avocado oil in a large pan over medium heat. Working in batches, if needed, add chicken breast and cook for 4-6 minutes on each side or until cooked through. Remove from pan and set aside.
Add onion, garlic, bell pepper, and carrots to pan. Cook for 5 minutes.

In a small bowl, combine peanut butter, soy sauce, ginger, crushed red pepper , and orange juice. Stir well to combine. Whisk in 1 teaspoon cornstarch. Add to pan and bring to a boil. Simmer for 3 minutes. Add snow peas and cook for an additional 2 minutes.
1/2 cup snow peas, 4 Tablespoons peanut butter, 4 Tablespoons soy sauce, 3 teaspoons ground, 1/4 teaspoon crushed red pepper, 1/2 cup orange juice, 1 teaspoon cornstarch
Serve stir fry over orange Jasmine rice.
