Orange Chicken Satay with Orange Jasmine Rice

Ingredients

Rice

  • 1 cup Jasmine rice rinsed
  • 2 Tablespoons orange zest

Chicken

  • 2 1/2 Tablespoons avocado oil
  • 1 1/2 pounds chicken breast cut into strips
  • 1 1/2 Tablespoons cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Stir Fry

  • 3 cloves garlic minced
  • 1 onion sliced
  • 1 bell pepper sliced
  • 2/3 cup shredded carrots
  • 1/2 cup snow peas trimmed

Stir Fry Sauce

  • 4 Tablespoons peanut butter
  • 4 Tablespoons soy sauce
  • 3 teaspoons ground fresh ginger
  • 1/4 teaspoon crushed red pepper
  • 1/2 cup orange juice
  • 1 teaspoon cornstarch

Instructions

Rice

  • Cook Jasmine rice according to package instructions. When finished, combine with orange zest in a bowl and set aside.

Stir Fry

  • In a bowl, combine 1/2 tablespoon oil, cornstarch, salt, pepper, and chicken breast. Stir to coat the chicken pieces.

  • Heat avocado oil in a large pan over medium heat. Working in batches, if needed, add chicken breast and cook for 4-6 minutes on each side or until cooked through. Remove from pan and set aside.
  • Add onion, garlic, bell pepper, and carrots to pan. Cook for 5 minutes.

  • In a small bowl, combine peanut butter, soy sauce, ginger, crushed red pepper , and orange juice. Stir well to combine. Whisk in 1 teaspoon cornstarch. Add to pan and bring to a boil. Simmer for 3 minutes. Add snow peas and cook for an additional 2 minutes.

  • Serve stir fry over orange Jasmine rice.
