Sangria is totally the drink of summer. There is nothing quite like a cool glass of wine, fruit and spirits at the end of a long, summer day. In winter, I usually make a red wine sangria but, for summer, I prefer a mixed berry summer sangria.
2cupsmixed berriesfrozen (I used raspberries, blackberries and blueberries)
2Tablespoonsmint simple syrup
750mLbottle Prosecco
Iceoptional
Mint Simple Syrup
1/2cupsugar
1/2cupwater
6mint leaves
Instructions
Mint Simple Syrup
In a small saucepan, combine sugar, water and mint leaves. Bring to a boil, stirring to dissolve sugar. Reduce heat and simmer for 3-4 minutes. Remove from heat and let cool completely. Remove mint leaves.
1/2 cup sugar, 1/2 cup water, 6 mint leaves
Sparkling Summer Sangria
In a large pitcher, combine raspberry lemonade, vodka, frozen berries, and 2 Tbsp mint simple syrup. Refrigerate for at least one hour.
2 cups raspberry lemonade, 1/3 cup vodka, 2 cups mixed berries, 2 Tablespoons mint simple syrup
Just before serving, add in prosecco and gently stir. Serve garnished with berries and serve over ice (optional).

Notes
You can substitute the raspberry lemonade with regular lemonade. It may require additional simple syrup though because the regular lemonade will be more tart than raspberry.
The nutritional values calculated here account for all of the simple syrup but you will only use 2 tablespoons of syrup.
