Mini Hasselback Potatoes

Ingredients

  • 12 small potatoes
  • Salt and pepper
  • 1 cup butter softened
  • 4 slices bacon cooked and crumbled
  • 1/2 cup shredded Parmesan cheese

Instructions

  • 1. Preheat oven to 400 degrees. Line a rimmed baking sheet with nonstick foil. Set aside.
  • 2. Make slices in each of the potatoes about 1 cm apart making sure you don't cut all the way through. Place on prepared baking sheet. Season with salt and pepper.
  • 3. In a small bowl, mix together butter and half of crumbled bacon. Spread onto potatoes making sure to spread inside the cuts. 
  • 4. Bake potatoes for 15 minutes. Top with shredded cheese and remaining bacon. Bake for an additional 5-10 minutes or until potatoes are tender inside and crispy on the outside.
