Ingredients

  • 1 pound ground beef
  • 1 tablespoon avocado oil
  • 1 red bell pepper finely diced
  • 1/2 cup finely diced zucchini
  • 1/4 cup finely diced carrots
  • 1 1/2 tablespoon gyro seasoning
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt

Instructions

  • Heat avocado oil over medium heat in a medium skillet. Add bell pepper, zucchini, and carrots. Cook, stirring occasionally, for 3-4 minutes or until vegetables begin to soften.
1 tablespoon avocado oil, 1 red bell pepper, 1/2 cup finely diced zucchini, 1/4 cup finely diced carrots
  • Stir in spices and cook for an additional minute. Remove from heat and let cool for 5 minutes.
1 1/2 tablespoon gyro seasoning, 1 teaspoon turmeric, 1/2 teaspoon ground coriander, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon salt
  • In a large bowl, combine ground beef and cooked vegetables. Mix well with hands. Using a meatball scoop, form meat into meatballs. You should get between 12-16 meatballs depending on the size of the scoop you use.
    1 pound ground beef
  • Spray the basket of the air fryer with cooking spray (I use avocado oil spray). Place meatballs into basket (see note below).
  • Cook meatballs at 370 degrees for 12 minutes. Check for doneness and, if necessary, cook for another 3-4 minutes until cooked through.

Notes

  • Depending on the size of your air fryer, you may need to cook the meatballs in two batches.
