Guacalsa
A combination of the two best Mexican items: guacamole and salsa!
- 2 15oz cans whole peeled tomatoes with juice (canned tomatoes...i know...gasp!)
- 2 cans diced tomatoes with chiles Rotel is great!
- 1/2 cup white onion finely chopped
- 2 cloves garlic minced
- 2 jalapeno halved, seeded and chopped
- 1/4 tsp salt
- 1/4 tsp sugar
- 1/2 tsp cumin
- 1/3 cup cilantro roughly chopped (you can use more if you dig lots of cilantro)
- 2 Tbsp lime juice ~ 1 whole lime
- Guacamole
- 2 avocados
- 1/2 cup red onion finely chopped
- 1 serrano chile minced
- 1 Tbsp lime juice
- 1 Tbsp cilantro finely chopped
- 1/2 tsp kosher salt
- 1 roma tomato seeded and diced
- pinch of cumin
Throw the whole tomatoes in the food processor and give it a whirl.
Then, add everything else in and pulse until you get the consistency you want.
For the guacamole, remove the seed from the avocado and spoon into a bowl. Mix in all the other ingredients and smash to combine.
