Guacalsa

A combination of the two best Mexican items: guacamole and salsa!

Ingredients

  • 2 15oz cans whole peeled tomatoes with juice (canned tomatoes...i know...gasp!)
  • 2 cans diced tomatoes with chiles Rotel is great!
  • 1/2 cup white onion finely chopped
  • 2 cloves garlic minced
  • 2 jalapeno halved, seeded and chopped
  • 1/4 tsp salt
  • 1/4 tsp sugar
  • 1/2 tsp cumin
  • 1/3 cup cilantro roughly chopped (you can use more if you dig lots of cilantro)
  • 2 Tbsp lime juice ~ 1 whole lime
  • Guacamole
  • 2 avocados
  • 1/2 cup red onion finely chopped
  • 1 serrano chile minced
  • 1 Tbsp lime juice
  • 1 Tbsp cilantro finely chopped
  • 1/2 tsp kosher salt
  • 1 roma tomato seeded and diced
  • pinch of cumin

Instructions

  • Throw the whole tomatoes in the food processor and give it a whirl.
  • Then, add everything else in and pulse until you get the consistency you want.
  • For the guacamole, remove the seed from the avocado and spoon into a bowl. Mix in all the other ingredients and smash to combine.
