Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it into crumbles, until browned and fully cooked, about 6-8 minutes. Drain excess fat if necessary.

Add the onion, garlic, and ginger to the skillet. Cook until softened and fragrant, about 2-3 minutes.

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil.

Pour the sauce into the skillet with the beef mixture, stirring to combine. Cook for 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Stir in the chopped peanuts green onions, and stir. Remove from heat.
