Ingredients

Sauce

  • 1/2 cup plain greek yogurt
  • 1/4 cucumber minced
  • 1/2 Tablespoon lemon juice
  • 1/2 Tablespoon olive oil
  • 2 garlic cloves minced
  • 1/2 Tablespoon fresh fill chopped
  • 1/2 teaspoon salt

Chicken

  • 2 boneless skinless chicken breast
  • 1 Tablespoon red wine vinegar
  • 2 Tablespoons olive oil
  • 1 garlic clove minced
  • 1 Tablespoon dried oregano
  • 1 teaspoon dried rosemary

Sandwich

  • 8 slices bread
  • 1/2 cucumber sliced
  • 1/4 cup pickled red onions
  • 4 slices romaine lettuce

Instructions

Sauce

  • To make the sauce, combine yogurt, minced cucumber, lemon juice, olive oil, garlic cloves, dill and salt in medium bowl. Stir well to combine. Refrigerate.

Chicken

  • Preheat oven to 375 degrees. For the chicken, whisk together red wine vinegar, olive oil, garlic clove, oregano and rosemary in a medium sized baking dish. Add chicken breast, turning to coat.

  • Cook in oven for 15-20 minutes or until chicken is done. Remove from oven and let cook. Slice into thin slices.

Sandwich

  • 3. Assemble sandwiches: Spread sauce on each interior side of bread. Top with cucumber slices, chicken slices, pickled red onions and romaine lettuce.

Notes

  1. The sauce can be made 1-2 days ahead and kept refrigerated.
  2. The chicken can be made 1-2 days ahead.
