Gingered Beef Flatbread Tacos

Ingredients

Onions:

  • 1 small red onion sliced
  • 1 cup rice vinegar
  • 1/2 tsp black pepper

Tacos:

  • 1 lb ground beef
  • salt and pepper
  • 2 cloves garlic
  • 1 Tbsp grated ginger
  • 1 1/2 Tbsp fish sauce
  • 1 Tbsp liquid from pickled onions
  • 1 zucchini finely chopped
  • 1/2 cup pickled onions
  • 1 small cucumber diced
  • 1/3 cup fresh mint finely chopped
  • 1/3 cup fresh parsley finely chopped
  • 4-6 small flatbreads I use Stonefire Mini Naan
  • 1/4 cup crumbled feta

Instructions

  • In a medium glass bowl, combine sliced onions, pepper and 1 cup rice vinegar. Refrigerate for at least one hour.
  • Heat a large skillet over medium heat. Add ground beef. Season with salt and pepper. Cook, stirring to crumble, until browned. Drain and return to pan.
  • Add garlic, ginger, fish sauce and pickling liquid. Cook for 1-2 minutes. Stir in zucchini and cook for an additional 2-3 minutes.
  • Remove from heat and stir in pickled onions, cucumber, mint and parsley. Divide between flatbreads and top with crumbled feta.

If you want to make this ahead of time, complete steps 1-3. When ready to heat, reheat beef mixture and then complete remaining step.
