Ingredients

  • 1 1/2 lb Beef (flat iron, skirt steak, or sirloin), cut into chunks
  • 2 Tbsp Avocado oil
  • 1 1/2 cup Jasmine rice
  • 3 cups water

Marinade

  • 3 Tbsp soy sauce
  • 6 cloves garlic, minced
  • 1 lime
  • 1 jalapeno, minced
  • 3 tsp sugar
  • 2 tsp Avocado oil

Quick Pickled Vegetables

  • 1 English cucumber, sliced into half moons
  • 1 cup Carrots, cut into matchsticks
  • 6 Tbsp rice vinegar

Herb Salad

  • 1/4 cup mint leaves, roughly chopped
  • 1/2 jalapeno, sliced
  • 1 Tbsp lime juice

Instructions

  • In a small bowl, whisk together soy sauce, garlic, juice and zest of 1 lime, minced jalapeno, sugar and avocado oil. Add beef and marinate for at least 10 minutes.

  • Bring water to boil in pot. Stir in rice, cover and reduce heat. Cook for 20 minutes on low.

  • In a medium bowl, combine cucumber, carrots and rice vinegar. Refrigerate until ready to use.

  • Heat 2 Tbsp oil in large pan over medium heat. Add beef, reserving marinade. Cook for 1-2 minutes on each side. Add reserved marinade to the pan and cook for an additional 2-3 minutes. Remove beef and bring sauce to boil. Boil for 2 minutes and then remove from heat.
