Bacon Cheeseburger Cups

As we get closer to the Super Bowl, it seems to be all football all the time in our house. Of course, as each game finishes, we are also thinking of the football watching parties we’ll be invited too soon for playoffs and the Super Bowl. I’ve been playing around with recipes and these bacon cheeseburger cups are a huge favorite right now.

Bacon Cheeseburger Cups

These little cups have all the best things of a cheeseburger packed into a little handheld appetizer. No utensils are needed to enjoy these. Of course, it is also very easy to pop a few in your mouth back to back because they are so good.

Ingredients for Bacon Cheeseburger Cups:

6 large tortillas
1 lb ground beef
4 slices bacon, cooked and crumbled
1/4 cup chopped pickles
1/4 cup shredded cheddar cheese
Ketchup
Mustard
Salt and pepper

Let’s Make It:

1. Preheat oven to 350 degrees. Lightly spray a mini muffin pan with nonstick cooking spray.

2. Using a biscuit cutter, cut tortillas into 24 mini circles. Press into bottom of mini muffin pan. Set aside.

3. Cook ground beef in a skillet over medium heat, stirring to crumble as it cooks. Season with salt and pepper. Stir in chopped pickles and bacon.

4. Squeeze small amount of ketchup into bottom of each tortilla cup. Fill with ground beef mixture. Top with shredded cheese. Bake in oven for 5-10 minutes or until cheese melts. Top with mustard before serving.

These are so great because you can easily customize them to include all your favorite cheeseburger toppings! I love them with ranch instead of mustard and change the cheese to pepperjack for a little bit of heat. Definitely play around with the ingredients to create your perfect bacon cheeseburger cup!
