Ingredients

  • 9 chunks fresh watermelon divided
  • 4 fresh mint leaves
  • 3 ounces vodka
  • 2 ounces lime juice
  • 1 1/2 ounces mint simple syrup
  • 1 cup ginger beer

Instructions

  • In the bottom of a large measuring cup, muddle 4 watermelon cubes with mint leaves.

  • Add vodka, lime juice, mint simple syrup, and ginger beer. Stir well.
    3 ounces vodka, 2 ounces lime juice, 1 1/2 ounces mint simple syrup, 1 cup ginger beer
  • Add remaining watermelon chunks to popsicle sleeves. Pour in vodka mixture. Seal and freezer for at least 24 hours.

Notes

  1. Be sure not to add too much alcohol or the popsicles will not freeze. The ratio should be approximately 1 part alcohol to 5 parts non-alcohol.
  2. Freeze for at least 24 hours. Keep in freezer until ready to enjoy.
  3. To make your own mint simple syrup, combine equal parts water and sugar and bring to boil. Boil until sugar is dissolved. Add 5-6 mint leaves. Turn off heat and let sit for 10 minutes. Remove mint leaves.
