Instructions
Preheat oven to 375 degrees. Lightly spray a baking dish with nonstick cooking spray.
In a large bowl, combine the potatoes, kale, Brussels sprouts and bell pepper. Season with salt, pepper and garlic powder.
Stir in sausage. Pour into prepared baking dish.
In the same bowl, whisk eggs until blended. Season with salt and pepper. Pour over vegetables in baking dish.
Bake in preheated oven for 30-35 minutes or until eggs are set.
