Thyme Limoncello Spritz

A Limoncello Spritz is a delightful combination of limoncello, prosecco, and club soda that will transport you to an Italian street cafe. This version adds a little herbal flavor with a delicious thyme simple syrup.

Ingredients

Thyme Simple Syrup

  • 1/2 cup granulated sugar
  • 1/2 water
  • 3-4 stems fresh thyme

Limoncello Spritz

  • 2 ounces Limoncello liqueur
  • 3/4 ounce Club soda
  • 1/2 ounce Thyme simple syrup optional
  • 2 1/2 ounces Prosecco

Instructions

Thyme Simple Syrup

  • Combine the sugar, water, and thyme in a small saucepan. Heat over medium heat, stirring until sugar is dissolved, about 5-6 minutes. Remove from heat and add thyme. Let the time steep in the sugar mixture until the syrup is completely cooled. Remove the thyme.
    1/2 cup granulated sugar, 1/2 water, 3-4 stems fresh thyme

Limoncello Spritz

  • Add ice to glass of your choice. Add prosecco to glass. Pour in limoncello and simple syrup, if using. Top with club soda and then gently stir to mix. Garnish with lemon slices and thyme, if desired.
    2 ounces Limoncello liqueur, 3/4 ounce Club soda, 1/2 ounce Thyme simple syrup, 2 1/2 ounces Prosecco

Notes

  • The thyme simple syrup can be stored in an airtight container in the refrigerator for up to 2 weeks.
  • You can leave out the thyme simple syrup for a classic limoncello spritz.
  • If you are out of club soda, just replace it with more prosecco.
