Ingredients

  • 2 chicken breasts cut into 1-inch pieces
  • 2 Tbsp avocado oil
  • 3 cloves garlic minced
  • 2 Tbsp grated ginger
  • 2 Tbsp red curry paste
  • 1/4 cup peanut butter
  • 1 can coconut milk
  • 1 can pumpkin puree
  • 2 bell peppers sliced
  • 1 onion sliced
  • 1 can chick peas rinsed and drained

Instructions

  • Heat oil in large skillet over medium heat. Season chicken with salt and pepper and cook for 5-7 minutes. Transfer to plate.

  • Add garlic and ginger to pan. Cook for 1 minute.

  • Stir in curry paste, peanut butter, pumpkin, and coconut milk. Mix well.

  • Add bell peppers, onion, and chick peas. Simmer for 5 minutes. Add chicken back to pan and cook for an additional 5 minutes.

  • Serve with rice.
