Peanut Butter Pumpkin Curry

2 chicken breasts cut into 1-inch pieces 2 Tbsp avocado oil 3 cloves garlic minced 2 Tbsp grated ginger 2 Tbsp red curry paste 1/4 cup peanut butter 1 can coconut milk 1 can pumpkin puree 2 bell peppers sliced 1 onion sliced 1 can chick peas rinsed and drained
Heat oil in large skillet over medium heat. Season chicken with salt and pepper and cook for 5-7 minutes. Transfer to plate.

Add garlic and ginger to pan. Cook for 1 minute.

Stir in curry paste, peanut butter, pumpkin, and coconut milk. Mix well.

Add bell peppers, onion, and chick peas. Simmer for 5 minutes. Add chicken back to pan and cook for an additional 5 minutes.
