Mustard Balsamic Chicken Kabob Recipe

Ingredients

Chicken Kabob Marinade

  • 4 Tbsp Heinz yellow mustard
  • 4 Tbsp Balsamic vinegar
  • 6 Tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 3 tsp fresh rosemary finely chopped

Chicken Kabobs

  • 1 red onion cut into wedges
  • 2 lbs chicken breast cut into 1 inch pieces
  • 1 green pepper cut into wedges
  • 8-10 large mushrooms cleaned
  • 8-10 small white potatoes

Instructions

  • In a small bowl, whisk together yellow mustard, Balsamic vinegar, lemon juice, garlic, paprika and rosemary. Reserve 1/2 of marinade.
  • Add chicken to 1/2 of the marinade and marinate in the refrigerator for at least 30 minutes.
  • Heat grill to medium heat. Oil grates lightly.
  • Remove chicken from the refrigerator and build your kabobs. I use a mix of the various ingredients. Grill 5-7 minutes on each side, basting with reserved marinade before turning, or until chicken is fully cooked. Serve with remaining reserved marinade on the side.
