- 1 tsp olive oil
- 1 lb ground Italian sausage
- 2 carrots peeled and finely chopped
- 1 onion finely chopped
- 1 zucchini finely chopped
- 2 garlic cloves minced
- 2 teaspoon oregano
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 1/4 teaspoon crushed red pepper
- 28 ounces crushed tomatoes
- 1/4 cup water
In a large skillet, heat oil over medium heat. Add sausage and cook until browned, stirring to crumble.

Add carrot, onion, zucchini and garlic. Cook for 3-5 minutes. Stir in oregano, rosemary, thyme and red pepper. Cook for 1-2 minutes or until fragrant.

Stir in tomatoes and water. Let simmer for 15 minutes. Season with salt and pepper. Serve over cooked pasta.
28 ounces crushed tomatoes, 1/4 cup water
- You can add additional vegetables into the sauce if desired. I puree spinach in with the tomatoes before adding them to the sauce frequently.
- This sauce makes a large amount. You can split it and freeze half to use for later.
