Easy Mustard Chicken Recipe

Ingredients

  • 1 pound boneless, skinless chicken breast cut into 1-inch pieces
  • 1 Tablespoon olive oil
  • salt and pepper to taste
  • 1/4 cup chicken broth
  • 1/2 teaspoon dried tarragon plus more for garnish
  • 2 Tablespoons Dijon mustard
  • 1/2 cup heavy cream

Instructions

  • Season the chicken pieces with salt and pepper.
    1 pound boneless, skinless chicken breast, salt and pepper to taste
  • Heat oil over medium heat in a large skillet. Add chicken and cook until browned. Remove chicken from pan and set aside.

  • Pour 1/4 cup of chicken broth into the pan and bring to a boil, scraping up the bits from the pan. Let simmer for 1-2 minutes or until reduced by half.

  • Whisk in the Dijon mustard and the tarragon. Simmer, whisking occasionally, for 2-3 minutes. Whisk in heavy cream. Continue to simmer for until sauce is slightly thickened; about 10 minutes. Return the chicken to the pan and toss to coat in the sauce.

Notes

  • You can substitute chicken breast with boneless, skinless chicken thighs. Chicken thighs will need an extra 1-2 minutes to cook.
  • Heavy cream can be substituted with half and half but the sauce will be thinner.
