1poundboneless, skinless chicken breastcut into 1-inch pieces
1Tablespoonolive oil
salt and pepper to taste
1/4cupchicken broth
1/2teaspoondried tarragon plus more for garnish
2TablespoonsDijon mustard
1/2cupheavy cream
Instructions
Season the chicken pieces with salt and pepper.
1 pound boneless, skinless chicken breast, salt and pepper to taste
Heat oil over medium heat in a large skillet. Add chicken and cook until browned. Remove chicken from pan and set aside.
1 Tablespoon olive oil
Pour 1/4 cup of chicken broth into the pan and bring to a boil, scraping up the bits from the pan. Let simmer for 1-2 minutes or until reduced by half.

Whisk in the Dijon mustard and the tarragon. Simmer, whisking occasionally, for 2-3 minutes. Whisk in heavy cream. Continue to simmer for until sauce is slightly thickened; about 10 minutes. Return the chicken to the pan and toss to coat in the sauce.

Notes
You can substitute chicken breast with boneless, skinless chicken thighs. Chicken thighs will need an extra 1-2 minutes to cook.
Heavy cream can be substituted with half and half but the sauce will be thinner.
