Copycat Cava Grain Bowl

Ingredients

  • 1/4 cup Greek yogurt
  • 2 Tbsp lemon juice
  • 1 boneless skinless chicken breast, cut into chunks
  • 1 cup brown rice cooked
  • 1/2 red pepper sliced
  • 1/4 cup pickled red onion slices
  • 2 Tbsp red pepper hummus
  • 2 Tbsp tzatziki sauce
  • 1/4 cup cucumber diced
  • 1/2 cup baby spinach
  • 2 lemon wedges

Instructions

  • 1. In a medium bowl, combine yogurt and lemon juice. Stir to combine. Add chicken and marinate for 10 minutes. Remove chicken from marinade and cook (grill, stovetop or oven).
  • 2. Divide rice between two bowls. Top each with red pepper slices, red onion slices, hummus, tzatziki, cucumber, spinach and cooked chicken. Serve each with a lemon wedge.

Notes

To quickly pickle red onions, place sliced red onion in bowl and add 1 cup of rice vinegar. Transfer to the fridge and let sit for at least 15 minutes.
