Ingredients
1Tbspolive oil
2shallotsminced
2clovesgarlicminced
1cuporzo
1/4cupdry white wine
1 3/4cupsbroth or stock
1/4cupshredded Gruyere cheese
1/4cupshredded white cheddar
2Tbspgrated Parmesan
3/4lbcooked lobster meatbroken into chunks
Instructions
In a medium saucepan, heat oil over medium heat.
Add shallot and cook for 1-2 minutes. Stir in garlic and cook for an additional minute or until fragrant.
Add orzo and cook, stirring constantly, for 1-2 minutes.
Stir in wine and broth. Bring to a boil. Cover and reduce heat to low. Simmer for 10-15 minutes, stirring occasionally, until most of the liquid is absorbed.
Remove from heat and stir in all three cheeses and lobster. Season with salt and pepper.
