Ingredients
1poundthick cut bacon
36cubes of pineappleroughly 1-inch wide
1cuplight or dark brown sugar
2teaspoonssmoked Paprika
¼teaspoonsalt
¼teaspoonblack pepper
Instructions
Preheat the oven to 275 degrees. Line a rimmed baking sheet with aluminum foil or parchment, and place a wire baking or oven safe cooling rack over top.
Slice each of the pieces of bacon into three equal sized strips.
1 pound thick cut bacon
Place a a piece of pineapple at one end of a piece of bacon, then roll upward toward the other end and tuck the end under.
36 cubes of pineapple
Roll the bacon wrapped pineapple in brown sugar to coat generously on all sides.
1 cup light or dark brown sugar
Place the brown sugar coated bacon wrapped pineapple onto the wire rack, seam-side down.
Repeat steps 4-6 until all of your pineapple pieces are wrapped and coated in brown sugar.
Sprinkle about 2 teaspoons of smoked paprika over the pineapple bites, then season with salt and pepper.
