Bacon Cheese Oatmeal Breakfast Cookies

Ingredients

  • 1 cup Bob's Red Mill Old-Fashioned Oats
  • 1/4 cup Water
  • 1/3 cup Coconut Oil
  • 1/4 cup Brown Sugar
  • 1 Egg lightly beaten
  • 1 cup All Purpose Flour sifted
  • 1 tsp Salt
  • 1/4 tsp Baking Soda
  • 1.5 tsp Fresh Thyme chopped
  • 1.5 tsp Fresh Rosemary chopped
  • 1/2 tsp Cracked Black Pepper
  • 1/2 cup Grated Parmesan
  • 1/2 cup Shredded Cheddar Cheese
  • 3 slices Bacon cooked and crumbled

Instructions

  • Preheat oven to 350 degrees. Line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine oats and water.
  • In a small bowl, combine coconut oil, brown sugar and egg. Mix into oats and stir to combine. Set aside.
  • In a medium sized bowl, combine flour, salt, baking soda, herbs and black pepper. Stir gently to combine. Stir in cheeses.
  • Working in batches, mix the flour mixture into the oats mixture. Add bacon and stir just until combined fully.
  • Scoop about 2 tablespoons (I use a meatball scoop) of dough onto baking sheet and flatten with your hand. Sprinkle with additional salt if desired.
  • Bake in preheated oven for 15 minutes or until lightly browned around the edges. Let cool on pan for 1-2 minutes and then transfer to nonstick cooling rack.
