Cranberry Apple Slaw

Ingredients

  • 8 cups shredded cabbage
  • 3/4 cup sliced almonds
  • 1 cup dried cranberries
  • 1 Granny Smith apple cut into 1-inch pieces
  • 1/2 cup basil coarsely chopped
  • Salt and pepper

Dressing

  • 1/3 cup avocado oil
  • 1/4 cup apple cider vinegar
  • 2 Tbsp maple syrup
  • 1 Tbsp Dijon mustard
  • 1/2 tsp kosher salt
  • 1 shallot minced

Instructions

  1. 1. Add shredded cabbage to large bowl. Season with salt and pepper. Add almonds, cranberries and basil.
  2. 2. In a small bowl, whisk together oil, apple cider vinegar, maple syrup, mustard, and kosher salt until well combined. Stir in shallot. Pour over cabbage and toss to combine. Store, covered, in refrigerator, until ready to serve.
