Rim two martini glasses with crushed graham cracker pieces.
Combine the half n half, limoncello, vanilla rum, simple syrup, and lemon juice in a martini shaker filled with ice.
Shake until chilled and well combined.
Pour the liquid into the graham cracker lined martini glasses.
Top with a dollop of whipped cream, garnish with a lemon slice, and sprinkle with additional graham cracker pieces.
*This recipe can be made dairy-free by replacing the half n half with coconut milk. Also, to make homemade vanilla whipped cream, whip about 1 ½ cups of heavy cream and 2 tsp of vanilla extract in a stand mixer fitted with a whisk attachment. Add sweetener of choice to suit your taste preferences. You could also substitute coconut milk for the heavy cream for a dairy-free garnish.
