Slow Cooker Beef Bacon Chili

Ingredients

  • 1 tbsp Ghee
  • 3 slices Bacon cut into 1-inch pieces
  • 3 lbs Boneless Short Ribs cubed
  • 2 cloves Garlic minced
  • 1 Onion sliced
  • 2 Jalapenos minced
  • 1 Bell Pepper diced
  • 1 tbsp Chili Powder
  • 1.5 tbsp Cumin
  • 2 cans Rotel Diced Tomatoes 1 drained and 1 undrained
  • 1 can Dark Red Kidney Beans drained
  • 3/4 cup Chicken Stock
  • 1 cup Pumpkin Puree

Instructions

  1. Heat ghee in pan over medium high heat. Add bacon and cook until crisp. Remove from pan. 

  2. Add beef and cook for about 2 minutes or until browned on all sides. Transfer beef and bacon to slow cooker bowl. Top beef with onion, garlic, jalapeƱos and bell pepper.

  3. Sprinkle mixture with chili powder and cumin. Add diced tomatoes, beans and chicken stock. Stir well.

  4. Cook on low for 8-10 hours. In the last 30 minutes of cooking time, add in pumpkin puree and stir well.
