Paleo Sloppy Joes

Ingredients

  • 2 White Sweet Potatoes peeled and thinly sliced
  • 2 tbsp Ghee divided
  • 1 lb Grass-Fed Ground Beef
  • 1 cup Diced Onion
  • 2 cloves Garlic Minced
  • 1 Green Pepper diced
  • 1 Red Pepper diced
  • 2 tsp Chili Powder
  • 1 tsp Cumin
  • 4 Pitted Dates
  • 1 cup Diced Tomatoes
  • 6 oz Tomato Paste
  • 1/2 cup Water

Instructions

  1. Preheat oven to 400 degrees. Melt 1 Tbsp ghee and brush on both sides of sliced sweet potato. Place on baking sheet. Season with salt and pepper. Bake for 10-12 minutes or until crisp.

  2. Meanwhile, heat remaining 1 Tbsp ghee over medium heat. Add onion and cook for 2-3 minutes. Add garlic and cook for an additional 1-2 minutes.

  3. Add ground beef and cook, stirring to crumble, until browned. Drain any liquid from the pan and return to medium heat. Remaining ingredients and bring to a boil. Reduce heat to low and simmer for 10 minutes. Remove dates.

  4. Serve sloppy joe mixture over sliced sweet potatoes.
