Cucumber Watermelon Salad

A quick and easy, no cook salad that features the best of summer flavors.

  • 2 small cucumbers spiralized
  • 1 1/2 cup watermelon chunks
  • 1/4 cup crumbled goat cheese
  • 1/4 cup balsamic vinaigrette
  • 2 Tbsp fresh mint chopped
  • 2 Tbsp fresh basil chopped


  1. In a large bowl, combine cucumber noodles, watermelon chunks, and goat cheese.

  2. Toss salad with balsamic vinaigrette. Top with mint and basil.

Recipe Notes

Crumbled feta can be substituted for the crumbled goat cheese.
