One Pot Spinach Artichoke Pasta

  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 16 oz penne pasta
  • 1 can quartered artichokes, drained
  • 2 Tbsp butter
  • 2 cups chicken broth
  • 1 cup milk
  • 1 cup spinach, roughly chopped
  • 1/2 cup shredded Gruyere or Swiss cheese
  • 1/4 cup grated Parmesan cheese
  • 1/8 tsp crushed red pepper
  • salt and pepper


  1. Heat oil in large pot over medium heat. Add onion and garlic and cook for 3-5 minutes or until softened.

  2. Add pasta, artichokes, butter, chicken broth and milk and bring to a boil. Reduce heat to simmer and cook for 10 minutes, stirring occasionally.

  3. Add spinach and cook for an additional 8-10 minutes. Remove from heat and stir in cheeses and crushed red pepper. {If the pasta is too thick, thin with extra milk}. Season with salt and pepper.
