Green Tea Walnut Quick Bread

Ingredients

  • 1 cup boiling water
  • 3 Lipton Orange Passionfruit Jasmine Green Tea bags
  • 1 3/4 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp all spice
  • 1/2 cup sugar
  • 1/2 cup buttermilk
  • 1/4 cup chopped walnuts
  • 1 Tbsp melted butter
  • 2 Tbsp vegetable oil
  • 3 Tbsp orange marmalade
  • 2 eggs
  • 1/2 cup powdered sugar
  • 2 tsp reserved tea

Instructions

  1. Place three tea bags in boiling water. Let steep for 3-5 minutes. Remove tea bags and let tea cool.

  2. Preheat oven to 350 degrees. Spray a loaf pan with nonstick cooking spray. Set aside.

  3. In a large bowl, combine flour, baking powder, baking soda, salt and all spice. Stir to combine.

  4. In a separate bowl, combine sugar, buttermilk, walnuts, butter, oil, marmalade, eggs and 3 Tbsp of tea from step 1. Stir well.

  5. Stir wet ingredients into dry ingredients. Mix until just combined. Pour into prepared loaf pan.

  6. Bake in preheated oven for 40-45 minutes or until toothpick inserted comes out clean. Let cook in pan for 5-10 minutes and then cool completely on wire rack.

  7. For glaze: stir together powdered sugar and 2 tsp tea until smooth. Drizzle on cooled bread.
