15 Minute Thai Peanut Noodles

Ingredients

  • 1 lb spaghetti
  • 1/2 red pepper sliced
  • 1 carrot cut into matchsticks
  • 1/4 cup chopped peanuts
  • 1/2 tsp sesame seeds
  • 1/2 tsp red pepper flakes

Sauce

  • 1/4 cup dark sesame oil
  • 5 Tbsp soy sauce
  • 2 tsp rice vinegar
  • 1 tsp Sriracha
  • 1/4 cup creamy peanut butter
  • 2 Tbsp honey
  • 2 cloves garlic minced
  • 2 tsp grated ginger

Instructions

  1. 1. Cook spaghetti according to package for al dente.
  2. 2. Meanwhile, in a medium bowl, whisk together all of the ingredients for the sauce.
  3. 3. Once done, drain the pasta and return it to the pot. Add bell pepper, carrots and sauce. Toss to combine. Serve topped with chopped peanuts, sesame seeds and dried red pepper flakes.
