Asian Cucumber Salad

Ingredients

  • 1 English cucumber
  • 1 red bell pepper diced
  • 1/2 red onion sliced
  • 2 tsp sesame seeds

Dressing

  • 3 Tbsp rice vinegar
  • 1 Tbsp soy sauce
  • 1 tsp honey
  • 1 clove garlic minced
  • 1 tsp grated fresh ginger
  • 1 Tbsp toasted sesame oil

Instructions

  1. 1. Slice cucumber in half and then slice lengthwise. Combine with bell pepper and red onion in medium bowl.
  2. 2. In a small bowl, whisk together rice vinegar, soy sauce, honey, garlic, ginger and sesame oil. 
  3. 3. Add dressing to cucumber mixture and toss to combine. Top with sesame seeds.
