Easy Teriyaki Shrimp Zucchini Noodles

  • 3-4 zucchini spiralized into noodles
  • 2 Tbsp sesame oil or oil of choice
  • 1/2 onion sliced
  • 1 lb shrimp peeled and deveined
  • Salt and Pepper
  • 1 bell pepper sliced
  • 1 cup pineapple chunks


  • 1/4 cup tamari soy sauce or coconut aminos
  • 1 Tbsp honey leave out for W30
  • 3 Tbsp NAKANO Rice Vinegar
  • 3 cloves garlic minced
  • 1 tsp grated fresh ginger
  • 1 Tbsp tapioca starch
  • 2 Tbsp cold water


  1. 1. Heat oil in large skillet over medium heat. Add onion and cook for 1-2 minutes.
  2. 2. Season shrimp with salt and pepper. Add to skillet and cook for 1-2 minutes on each side. Stir in bell pepper slices and pineapple.
  3. 3. In a small bowl, whisk together tamari, honey, rice vingar, garlic and ginger. Add to skillet and bring to a boil. Reduce heat to simmer. In a small bowl, whisk together tapioca starch and water. Stir into skillet. Add zucchini noodles and cook for 2-3 minutes or until sauce has thickened. Serve immediately.
