Copycat Cava Grain Bowl

Ingredients

  • 1/4 cup Greek yogurt
  • 2 Tbsp lemon juice
  • 1 boneless skinless chicken breast, cut into chunks
  • 1 cup brown rice cooked
  • 1/2 red pepper sliced
  • 1/4 cup pickled red onion slices
  • 2 Tbsp red pepper hummus
  • 2 Tbsp tzatziki sauce
  • 1/4 cup cucumber diced
  • 1/2 cup baby spinach
  • 2 lemon wedges

Instructions

  1. 1. In a medium bowl, combine yogurt and lemon juice. Stir to combine. Add chicken and marinate for 10 minutes. Remove chicken from marinade and cook (grill, stovetop or oven).
  2. 2. Divide rice between two bowls. Top each with red pepper slices, red onion slices, hummus, tzatziki, cucumber, spinach and cooked chicken. Serve each with a lemon wedge.

Recipe Notes

To quickly pickle red onions, place sliced red onion in bowl and add 1 cup of rice vinegar. Transfer to the fridge and let sit for at least 15 minutes.
