Easy Korean Beef Bowls

Korean beef bowls are a great easy beef recipe that is perfect for meal prepping.

Ingredients

  • 1 1/2 lb Wellsley Farms stew beef
  • 2 Tbsp Wellsley Farms avocado oil
  • 1 1/2 cup Wellsley Farms jasmine rice
  • 3 cups water

Quick Pickled Vegetables

  • 1 English cucumber, sliced into half moons
  • 1 cup Wellsley Farms carrots, cut into matchsticks
  • 6 Tbsp rice vinegar

Herb Salad

  • 1/4 cup mint leaves
  • 1/2 jalapeno, sliced
  • 1 Tbsp lime juice

Marinade

  • 3 Tbsp soy sauce
  • 6 cloves garlic, minced
  • 1 lime
  • 1 jalapeno, minced
  • 3 tsp sugar
  • 2 tsp Wellsley Farms avocado oil

Instructions

  1. In a small bowl, whisk together soy sauce, garlic, juice and zest of 1 lime, minced jalapeno, sugar and avocado oil. Add beef and marinate for 10 minutes.

  2. Bring water to boil in pot. Stir in rice, cover and reduce heat. Cook for 20 minutes on low.

  3. In a medium bowl, combine cucumber, carrots and rice vinegar. Refrigerate until ready to use.

  4. Heat 2 Tbsp oil in large pan over medium heat. Add beef, reserving marinade. Cook for 1-2 minutes on each side. Add reserved marinade to the pan and cook for an additional 2-3 minutes. Remove beef and bring sauce to boil. Boil for 2 minutes and then remove from heat.

  5. In a small bowl, combine mint, sliced jalapeno and 1 Tbsp lime juice. Stir to combine.

  6. Serve cooked beef with rice, pickled vegetables and herb salad.
