Green Goddess Vegetable Sandwich

A delicious veggie sandwich topped with a homemade green goddess dressing. This sandwich is a super tasty vegetarian sandwich option!

  • 4 slices oatmeal or other seeded bread
  • 2 oz Wellsley Farms herbed goat cheese room temperature
  • 1/2 hot house cucumber thinly sliced
  • 1 avocado sliced
  • 2 Tbsp lemon juice
  • 1/2 cup alfalfa sprouts
  • 1/2 cup Wellsley Farms baby spinach

Green Goddess Dressing

  • 1 cup mayonnaise
  • 3/4 cup minced scallions
  • 1 cup basil leaves
  • 4 Tbsp fresh parsley
  • 1/4 cup lemon juice
  • 2 cloves garlic minced
  • 2 tsp anchovy paste
  • 2 tsp kosher salt
  • 1 tsp ground black pepper
  • 1/2 avocado


  1. In a food processor, combine mayonnaise through avocado for the dressing. Turn on to combine. Transfer to container and store in refrigerator until ready to use.

  2. Toss avocado slices with 2 Tbsp lemon juice.

  3. Spread softened goat cheese on one side of two slices of bread. Top with sliced cucumbers, sliced avocado, alfalfa sprouts and baby spinach.

  4. Spread one side of the remaining two slices of bread with the dressing from step 1. Place, dressing side down, on top of the baby spinach. Enjoy!
