Cinnamon Quick Bread

Ingredients

  • 2 cups All Purpose Flour
  • 1 tsp Cinnamon
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 5 tbsp Butter softened
  • 2/3 cup Granulated Sugar
  • 3 large Eggs
  • 1 tsp Vanilla Extract
  • 1 cup Fat-Free Buttermilk
  • Baking Spray with Flour

Topping:

  • 1/3 cup Packed Brown Sugar
  • 1 tbsp Flour
  • 1/4 tsp Cinnamon
  • 1 tbsp Butter melted

Instructions

  1. Preheat oven to 350 degrees. Lightly spray a loaf pan with baking spray. Set aside.

  2. Combine flour, baking soda, baking powder and 1/2 tsp salt in a large bowl. Stir well to combine.

  3. Beat together 5 Tbsp butter and granulated sugar until smooth. Add eggs, one at a time.

  4. With the mixer on low, alternate additions of flour mixture and buttermilk; ending with flour mixture. Mix until just combined. Transfer batter to prepared loaf pan.

  5. In a small bowl, combine brown sugar, 1 Tbsp flour, 1/4 tsp cinnamon and melted butter. Sprinkle on top of batter in pan.

  6. Bake at 350 degrees for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes and then remove from pan to cool completely on a wire rack.
