Hoisin Pork with Snow Peas

Ingredients

  • 1 cup hoisin sauce
  • 1/2 cup soy sauce or tamari
  • 1/4 cup rice vinegar
  • 1 Tbsp lemon juice
  • 8 garlic cloves minced or thinly sliced
  • 1.5 - 2 lb pork tenderloin
  • 2 cups snow peas trimmed
  • 2 Tbsp sesame seeds
  • green onions sliced

Instructions

  1. In a large bowl, combine 1/2 cup hoisin suace, 1/4 cup soy sauce or tamari, 2 Tbsp rice vinegar, lemon juice and 4 garlic cloves. Stir well to combine.
  2. Add pork to a ziploc bag or large bowl with lid. Pour marinade over the pork and let marinate in the fridge overnight.
  3. Preheat oven to 400 degrees. Discard marinade and place pork on baking sheet and cook for 30 minutes.
  4. Steam snow peas for 5 minutes.
  5. In a small saucepan, combine 1/2 cup hoisin sauce, 1/4 cup soy sauce or tamari, 2 Tbsp rice vinegar and 4 garlic cloves. Bring to a boil over medium heat. Reduce heat and simmer for 5-7 minutes or until slightly thickened.
  6. Place snow peas on platter and top with sliced pork. Drizzle with reduced hoisin mixture. Sprinkle with sesame seeds and green onions.
