Nothing beats a one pot pasta recipe on a busy night! This spinach and artichoke version is so creamy and delicious. It will be an instant hit.
Heat oil in large pot over medium heat. Add onion and garlic and cook for 3-5 minutes or until softened.
Add pasta, artichokes, butter, chicken broth and milk and bring to a boil. Reduce heat to simmer and cook for 10 minutes, stirring occasionally.
Add spinach and cook for an additional 8-10 minutes. Remove from heat and stir in cheeses and crushed red pepper. {If the pasta is too thick, thin with extra milk}. Season with salt and pepper.
