1. In a large skillet, heat oil over medium heat. Add sausage and cook until browned, stirring to crumble.
2. Add carrot, onion, zucchini and garlic. Cook for 3-5 minutes. Stir in oregano, rosemary, thyme and red pepper. Cook for 1-2 minutes or until fragrant.
3. Stir in tomatoes and water. Let simmer for 10 minutes. Serve over cooked pasta.
Recipe Notes
1) You can add additional vegetables into the sauce if desired. I puree spinach in with the tomatoes before adding them to the sauce frequently.
2) This sauce makes a large amount. You can split it and freeze half to use for later.
