Winter Squash Gnocchi

Ingredients

  • 1 Tbsp oil
  • 1 lb fresh gnocchi
  • 2 cups butternut squash cubed
  • 4 oz cherry tomatoes halved
  • 2 cloves garlic roughly chopped
  • 3 mini peppers seeded and sliced
  • 2 Tbsp butter
  • 3 Tbsp grated Parmesan
  • Salt and Pepper

Instructions

  1. 1. Bring a large pot of water to boil over high heat. 
  2. 2. Meanwhile, heat oil in large pan over medium heat. Add squash and cook for 7-10 minutes.
  3. 3. Add peppers and garlic to pan with squash. Season with salt and pepper. Cook for 1-2 minutes. Add tomatoes and cook for an additional 1-2 minutes.
  4. 4. Add gnocchi to large pot of boiling water and cook for 3-4 minutes. Drain, reserving 1/3 cup of water. 
  5. 5. Add gnocchi, butter and 1/2 of the reserved water to pan with squash. Cook for 1-2 minutes or until butter is melted. Add additional reserved water if pan seems dry. Top with grated Parmesan before serving.
