Lemon Chicken Soup

Ingredients

  • 1 Tbsp butter
  • 1 onion diced
  • 2 cloves garlic minced
  • 3 stalks celery sliced
  • 4 carrots peeled and sliced
  • 1 Tbsp oregano
  • Salt and pepper
  • 6 cups chicken broth
  • 2 cups quick cooking rice
  • 2 cups cooked chicken breast cubed
  • 1/4 cup lemon juice
  • lemon slices for garnish

Instructions

  1. 1. Melt butter in large pot over medium heat. Add onion and cook for 2-3 minutes. Add garlic and cook for an additional 1 minute. Stir in celery, carrots, and oregano. Cook for 2-3 minutes. Season with salt and pepper.
  2. 2. Stir in chicken broth and bring to boil. Reduce heat and simmer for 10 minutes.
  3. 3. Add rice and cook for 8 minutes. Stir in chicken breast and cook for an additional 2 minutes. Remove from heat and stir in lemon juice. Top with lemon slices before serving.
