Tuna Melt Stuffed Avocado

Ingredients

  • 2 packages Blue Harbor Fish Co. tuna
  • 1 Tbsp Greek yogurt
  • 2 Tbsp mashed avocado
  • 1 tsp mustard
  • Salt and Pepper
  • 1/4 cup grape tomatoes quartered
  • 1/4 cup shredded cheddar cheese
  • 1 avocado halved

Instructions

  1. 1. In medium bowl, combine tuna, yogurt, mashed avocado, mustard, salt and pepper. Stir in grape tomatoes. Spoon into avocado halves and top with cheese. 
  2. 2. Place onto baking sheet and broil for 5 minutes or until cheese is melted.
