Feta Turkey Meatloaf Muffins

Ingredients

  • 1/2 Tbsp oil
  • 1/2 onion diced
  • 1 carrot finely chopped
  • 1 zucchini shredded
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp oregano
  • 1 lb ground turkey
  • 1 large egg
  • 1/2 cup panko crumbs
  • 1/2 cup crumbled feta
  • 1/2 cup marinara
  • Fresh basil

Instructions

  1. 1. Preheat oven to 375 degrees. Lightly grease muffin tin or link with paper or silicone liners. Set aside.
  2. 2. Heat oil over medium heat. Add onion and carrot and cook for 1-2 minutes. Add zucchini and cook for 2-3 minutes. Season with salt, pepper, and oregano. Let cool slightly.
  3. 3. In a large bowl, combine turkey, egg, cooled onion mixture, panko crumbs, and crumbled feta. Divide mixture between prepared muffin cups. Top with marinara sauce.
  4. 4. Bake for 20 minutes in preheated oven. Top with fresh basil before serving.
