Watermelon Mint Moscow Mule Boozy Popsicles

  • 9 chunks fresh watermelon divided
  • 4 fresh mint leaves
  • 3 oz vodka
  • 2 oz lime juice
  • 1 1/2 oz mint simple syrup
  • 1 cup ginger beer


  1. 1. In the bottom of a large measuring cup, muddle 4 watermelon cubes with mint leaves.
  2. 2. Add vodka, lime juice, mint simple syrup, and ginger beer. Stir well.
  3. 3. Add remaining watermelon chunks to popsicle sleeves. Pour in vodka mixture. Seal and freezer for at least 24 hours.

Recipe Notes

1. Be sure not to add too much alcohol or the popsicles will not freeze.

2. Freeze for at least 24 hours. Keep in freezer until ready to enjoy.

3. To make your own mint simple syrup, combine equal parts water and sugar and bring to boil. Boil until sugar is dissolved. Add 5-6 mint leaves. Turn off heat and let sit for 10 minutes. Remove mint leaves.
