Our summer weather has been amazing. Beautiful days have kept us outside playing all the time and we rarely hear “I’m bored.” That all changed during a streak of rainy days and we were left wondering what to do to keep the kids entertained. I like to avoid TV and iPad time as much as possible so I started thinking of rainy day games we could play. The first one we tried: Q’s Race to the Top.

Teriyaki Chicken Kabobs and Sticky Finger Solutions

Once the weather turns warm, I pretty much rely on our grill to cook all of our food.  There is literally nothing like enjoying a nice evening on the deck with a delicious meal from the BBQ.  Of course, a lot of those meals leave super messy hands behind after the stomachs are long full.  I like to keep a supplies on hand to make it easy to eat outside and clean up while we are there too.  I toss a few necessities into a little metal tub and it becomes our summer dinner “emergency kit.”

A Glimpse: Our Clean Routine

With the new year, I wanted to focus a little more on some of the things that happen with our family and in our home.  A big subject around our house these days is staying clean.  You see we tackled potty training with very little problems.  BUT, it seems the hard work actually comes AFTER the potty training.  Once you get the kids to the potty, you have to teach them the correct way to wipe, remind them to flush and clean their hands.  This goes on even now.

My Healthy #BreakfastDelight

Beep…Beep…Beep.  That’s my alarm.  What time is it?  It is 4:15am which means it is time to get up and ready for work.  Yep, you read that right…4:15AM.  That gives me exactly 45 minutes to get showered, dressed and out the door.  

Why so early?  A few years back my office moved locations and I found it was so much better for me to work earlier in the morning than go in at a more regular time of 8:00am.  So, I work 6:00am – 2:30pm.  That means I eat breakfast when most people are just rolling out of bed and I definitely do not have time {or even want} breakfast before I leave my house at 5:00am.   So, I’ve got to find breakfast choices that
– are easy to pack in my lunch bag
– can be prepared with only a microwave
– are healthy
– are delicious

Unfortunately, that isn’t easy to find so I can usually be found eating oatmeal day in and day out.  I recently found Jimmy Dean Delights though and my oatmeal consumption has dramatically decreased.  There are a ton of delicious options including breakfast sandwiches and French toast.  Yes, French toast…with turkey sausage…for under 300 calories.  Mouth watering? We all have them…special people in our lives who are nearly impossible to shop for.  The father who buys himself everything…the grandmother who already has everything…the wonderful au pair who you know will eventually have to get anything you give back to their home country and is limited on suitcase space.   You can probably guess that last one is me!  Maya has been with us since July and she is beyond wonderful.  Seriously, I could go on and on.  As I was searching for gift ideas for her, I knew that what I chose needed to be special like her but also on the smaller side to make it easy to get back to Germany when the time came.

No Boil Barbecue Chicken Alfredo Lasagna

My family loves pasta.  Like, seriously loves pasta!  I love the convenience of many pasta dishes too…especially lasagna because it can be assembled ahead of time and cooked later.  Plus, lasagna is one of those dishes that gets a little better the day after too.  The problem: I am not really a traditional lasagna lover so I tend to skip it when making my weekly menu plan.  The other day, I was looking at how crazy busy our week is going to be and decided lasagna would be the perfect thing to fill one of our empty days.  I stopped on the way home from getting my haircut and grabbed the ingredients I needed to make No Boil Barbecue Chicken Alfredo Lasagna.

This is a great idea and totally different take on lasagna! YUM!

Crazy Busy Nights Need #HonestlyGood Food

It is Tuesday.  In our house, that means that I am home for exactly 15 minutes between the hours of 5am and 8:30pm.  Those 15 minutes have to be filled with all of the following:
– changing out of my work clothes
– ensuring my daughter is ready for gymnastics {dressed, fed, hair pulled back, water bottle full, etc}
– eating dinner

Easy and Healthy Lunch Recipes

I always struggle with lunch.  It is the meal of the day that gives me the hardest time when I am trying to eat healthier {which, honestly, needs to be more often}.  I work full time so whatever I have for lunch needs to be easily transported to work and be microwave friendly.  Easy AND healthy lunch recipes, besides a traditional salad, that fits into the work friendly category can be difficult to come by.

After a recent trip to the doctor to follow-up on my surgery, we stopped at Harris Teeter and I grabbed a few magazines to keep me entertained during recovery.  The cover of the July issue of All You grabbed my attention because it advertised 31 family meals and ways to kick start your metabolism {something I desperately need}.  I love finding new recipes for family meals because I can usually turn the leftovers into lunch ideas.  

As I was flipping through the issue of All You, I found an entire article on healthy eating that included some great ideas for lunch.

Sandwiches are a great option for lunch but can often be high in calories and fat.  The magazine had a great recipe for a tuna salad that wasn’t full of mayonnaise and other high fat ingredients.  What I loved is that it is easy to customize too.
