Thai Ginger Zucchini Soup

Ok, so you remember January when I was totally eating like a cave girl and doing Whole30? Well, a funny thing happens during Whole30 and you start doing “strange” things like eating soup for breakfast or eggs for dinner. I can’t tell you how many strange looks I got at 8am when I was warming up my Thai ginger zucchini soup in the office kitchen for breakfast. Not as strange as the guy with the turkey dinner waiting for the microwave but still some raised eyebrows. This soup is seriously so good though and, while most people would probably enjoy it for lunch or dinner, I some how really wanted it for breakfast a lot.

Pumpkin Hummus

So far, I’ve been light on the pumpkin recipes here this year. Of course, the internet is blowing up with just about anything and everything pumpkin. I love pumpkin and have definitely been cooking/baking it with recently. Stuffed Acorn Squash

Fall is here {or at least on its way} and I am loving the cooler temperatures. Fall is definitely my favorite season and I like to enjoy everything it has to offer from gorgeous weather to delicious comfort food. Once fall hits, I turn from zucchini and spaghetti squash and focus more on butternut squash and sweet potatoes. Fall and winter squash are so easy to find at just about any grocery store so it is so easy to use them in recipes. I was trying to decide what to make for dinner one night and decided to make stuffed acorn squash instead of pulling out my typical butternut squash.

Love the idea of filling fall squash for dinner.

Teriyaki Chicken Quinoa Bake

Warm summer nights usually mean I hang out in front of the grill cooking up kabobs or some other delicious grilled meal.  Sometimes though, I am either just too hot or too tired to get out there and grill.  Those are the nights that I pull out my recipe for teriyaki chicken quinoa bake and make a dinner that requires a little less active cooking than my typical grilled recipes.

Gluten Free Chicken and Kale Salad

I have a good friend {amaze-ball friend, really} who recently had to go gluten free for health reasons.  Now, I know that these days there are all kinds of gluten free products out there to help people make the transition but it can still come as a shock to your system.  So, in an effort to help and be supportive, I decided that I would start including more gluten free options here on the blog.  I find that lunch is typically the most difficult meal for me to make specialized in any way because it usually eaten at the office so I decided to focus on lunch first and made this gluten-free chicken and kale salad topped with a carrot cucumber dressing.  Not only is it gluten free but it is super healthy and delicious too.

Cleaning and Cooking in the Kitchen

I love to cook! In fact, if I had my way, I would totally spend all of my free time cooking in the kitchen. I hesitate to call myself a chef though because what I do in the kitchen is definitely more playing than anything of actual skill.

Of course, with playing around in the kitchen, comes a bunch of big messes.  I’ve been known to knock over full boxes of quinoa onto the floor or have little pieces of pasta fall onto the floor when I break the spaghetti in smaller pieces for my kids to eat.  There is a little corner in my kitchen that gets all the little extras that fall and don’t get noticed because I am focused on the food and not the clean up.  Then, when I run the little mini vacuum around the kitchen to do our nightly cheerio pick up, that food just gets bypassed because it is too far in the corner for the little vacuum to reach.
